Planning ahead for the big ride this week...
Ten to fifteen years ago none of the items on that trey would have ever been put anywhere next to my mouth. Now they are staples of my weekly meals and my planning. I probably should grow my own little garden. However, lets be honest, I have done enough gardening and trying to get out of gardening in my life time. So, I am happy to just pick up these items at the store. Look at the colors, my god they are beautiful.
Peppers I have been eating on and over since my 30's. The Zucks as my Dad would have called them, the Zucchini is something that I have just started eating in the last 6 - 8 months. I would have never thought the following words would come out of my mouth or through my fingers as it is, but I can't get enough of them. I love the Zucks. What is the ole saying better later than never.
I do realize sometimes we just have bad exercise days. Friday, could have just been a fluke of being tired. However, I also realize I have to put myself in a better place by fueling myself better and getting lots of sleep. I have to say no to the TV and want to watch just one more episode. The girls and I have to head to the bedroom at 9:30 sharp. Phones down and snacks eaten (girls get the snacks not me) and off to dream land.
Fuel is so important to me. I really try to balance my marcos. 40% carbs, 30% fat, and 30% protein. So, I have a few really good recipes that I love that I have been using. I make my own little tweaks to them and add some different meats, or veggies.
Meal 1 this weeks was that I called Billy b's Fried Rice Casserole:
It is a nice blend of brown rice, ground turkey breast, yellow peppers, zukes, green pepper, red, pepper, onion, garlic, coconut aminos, Mrs. Dash, Pepper, red pepper flakes, sun dried tomatoes, eggs and smoked paprika.
I baked my veggies for 25 minutes at 425... so good
I mix everything in a pot, and then put it in the casserole dish and back for 25 minutes. It is fantastic. I have even taken to diced up some chicken breast and eating it on top of it. Nom Nom Nom
My second meal for the week was my own take on a spaghetti squash casserole dish I have made in the past and love...
